Chocolate Almond Cookies

Chocolate Almond Cookies


Adding almonds to chocolate cookies, you will get the perfect balance of tastiness and delicacy. Thiner, less soft and less sugary than the Chocolate chip cookies, these almond cookies are perfect for having with a relaxing cup of coffee.

INGREDIENTS 

75 grams butter at room temperature 
1 egg
100 grams brown sugar
1 teaspoon vanilla extract 

100 grams all-purpose flour
1 teaspoon baking soda
30 grams ground almonds
30 grams cocoa powder
150 grams dark chocolate 

RECIPE

 
First mix butter and brown sugar all together until the mixture is homogenous and fluffy


Add egg and vanilla extract and stir until combine

Prepare the dry ingredients in a separate bowl. Put together flour, baking soda, and cocoa powder
Sift it in another bowl with a strainer



Then, add the the dry ingredients to the buttery mixture
When the mixture is mixed, add chocolate until it becomes sticky
Then add the almonds and mix

Tip! The dough is ready if you are able to shape the dough and it is not sticky.

Cover and keep it cold for 30 minutes
Tip! If you cold the dough longer than 30 minutes, it might be difficult to take spoons and shape them.

Preheat the oven to 350F degrees (180º C)


  Line in a large baking sheet a baking parchment
Take 2 spoons of dough and make a small ball
Pop them on the baking parchment at 5 cm from each other, because they will expand

Bake for 10 - 15 minutes


 Cool them on the baking sheet for 1 minute before transferring to a wire rack


This cookies lasts up to 3 days.
